GF Carrot Cake Cookies

Ingredients
-Cookie-
2 1/4 cups gf flour
1/2 cup brown sugar
1/4 cup coconut sugar
1 stick melted butter
1tsp baking soda
2 egg
Vanilla
Cinnamon
1tbs lemon juice
1/2 cup Chopped pecans
1/2 cup Chopped shredded carrots

-Cream Cheese Frosting-
1 cup butter
2 packages cream cheese (8oz)
4-5 cups powder sugar
Vanilla

-Pecan Pie Filling Bars Crumble-
1/2 cup melted coconut oil
1/4 cup maple syrup
2/3 cup coconut sugar
Vanilla
1tbs oat milk
Pecan
Directions

-Cookies-
1.Preheat oven to 350°
2.Mix all ingredients for cookies
3.Chop shredded carrots and pecans then fold into dough
4.Line baking pan & spray.Scope dough with cookie scooper, roll dough into balls and press down.
5.Bake for about 10-12 min. Allow time to cool before icing.

-Pecan Pie Filling Crumble Bars-
1. In a pan heat together all the ingredients expect for the pecan and stir constantly.
2. Once at a boil add pecan and stir for about 5 min.
3. Line a baking pan & spray.
4. Pour pecan filling and place in the freezer for about 45 min.
5. Then once have set chop/break into small pieces for topping

-Cream Cheese Frosting-
1. Make sure butter & cream cheese is soften.
2. Mix all ingredients together
3. Store in fridge while cookies are cooling
4. Then frost & top with pecan pie filling bar crumble
